Hawthorn Syrup
(from National Geographic guide to Medicinal Herbs) 
 

Combine 1 cup of fresh or ½ cup dried hawthorn berries and 3 cups of water in a saucepan.  Simmer for 10 minutes.  Remove from heat and cool. Mash berries with potato masher and simmer again for 10 minutes.  Strain liquid and pour back into pan. Add 1 cup of honey.  Heat gently until honey dissolves.  Store in refrigerator for up to 3 weeks.  Enjoy 1 to 2 tablespoons of syrup daily as part of a heart- healthy diet.
