Elderberry Syrup

Elderberry Syrup are rich in vitamin C and anti-oxidants and are beneficial to the immune system. It helps fight infection and shortens the duration of a cold. If you use good quality honey and store the syrup in the fridge, then it should last a few weeks. During the winter, I like to take a spoonful of the syrup a couple of times a day as an immune booster. It is also very nice mixed with warm water (reminds me of the hot Ribena drinks I used to have).

Ingredients:
4 cups water
1 cup dried elderberries
1 cinnamon stick
a wedge of ginger root grated
1 tsp star anise (optional)
1 tsp cloves
1 cup honey
 
Put all ingredients (except honey) into a pot and boil for 30 - 40 minutes. Strain well and leave to cool slightly. Then stir in honey. Put into sterilised bottles and store in the fridge.
