Herbal Honey

Herbal Honeys are very easy to make but the quality of the herbal honey obviously depends on the quality of the products being used. Try to use a locally produced, dark honey and good quality herbs.

To create, simply, half fill your jar with dried herbs, then drizzle over the honey. The herbs will move to the top of the jar, so every day just turn the jar over. After a couple of weeks, warm the honey and strain out the herbs. Enjoy!

You can use many different combinations of herbs and spices. I have make a herbal honey with Anise Hyssop and Star Anise (because I just love the taste of aniseed!). I have also made a lavender honey which will be lovely as a desert honey or in baking. Other herbs you could use include sage, thyme, tulsi, lemon balm, chamomile, rose petals, cinnamon, ginger, rosemary, vanilla.
